
Over the weekend I was involved in a covert operation. Insert mission impossible music here. (dun dun da da dun dun da da dun dun da da dun dun da da doo doo dooooo....dooo doooo dooo....doooo doooo doooo da da) You see, my parents neighbor is a wonderful and generous man with a huge garden and a small apple orchard behind his home. He grows zucchini's that would give a baseball bat a run for it's money. I mean, I think he fertilizes them with plutonium or something. Then gives them away to my parents. No matter how often they politely refuse they cannot seem to escape the wrath of the zucchini's on the porch or randomly tossed at them while walking into the house.
After weeks of zucchini stir fry, zucchini casserole, and zucchinni'd zucchini they can no longer eat zucchini as they may grow zucchini from their ears. Now, here is where the undercover action comes in. I was invited to secretly take one of these zucchini's home. That's right, I had a re-gifted zucchini. My mission was to smuggle it out to my car without the neighbor noticing.
Now, I have smuggled my fair share of beverages into a dormitory or snacks into the movie theatre but THIS was a challenge. It was at least a foot and then some long and pretty thick too. I put it into my bag. It didn't work, it stuck out. I tried to place it into the back of the stroller. Nope, that didn't work either. I only had one thing left to do. UP THE SLEEVE! That's right. I smuggled a zucchini up my sleeve and into my car. The rewards were completely worth all of the effort, be it a little bit sneaky effort.
Now here is a quick and dirty recipe for an awesome zucchini cake.
Recipe
Ingredients:
1 chocolate cake mix
equal parts zucchini to usual oil and water
eggs
Take a regular cake mix, replace the water and oil with steamed pureed zucchini, (if it calls for 1/2 cup oil and 1 cup of water you would use 1 1/2 cups of pureed zucchini) use the same amount of eggs as the original mix calls for and , and bake according to directions. I baked mine in a bunt pan and then heated up some dark chocolate fudge frosting for the drizzle. This is a take on a fat reducing form in which you use applesauce instead of fat and water. It tastes fantastic and you are sneaking your family vegetables in their sweets.
You see, we mom's just give and give and give...sigh.

OH yum. I love zucchinis, we grate it and put it on pizza, right on top of the mozarella adn tomato sauce and just under the bacon. YUM>
